This was a cross between a quiche and pizza. It has 2 crusts and is stuffed with mozzarella and pecorino cheese. I substituted bacon for the prosciutto and added mushrooms. I loved the contrast between the sweet crust and the savory filling, but I felt there was way too much mozzarella. My family liked it, but I think in the future we'd rather have either a quiche or a pizza, not a hybrid.
I had a few problems with the crust. One, I ate way too much while making it--so good! Two, I didn't divide the two parts very well so I had too much on the bottom and not enough for the complete lattice on top. It looked very homemade :-)
All in all, it was a nice addition to dinner and we'll enjoy the leftovers tonight.
Janice-this crust was very "loose" I think so it would be hard to make it shape up pretty. But I'm glad I tried this recipe. I may even make it again with some changes based on others comments. Glad you tried it too!
