Pizza Rustica

This was a cross between a quiche and pizza.  It has 2 crusts and is stuffed with mozzarella and pecorino cheese.  I substituted bacon for the prosciutto and added mushrooms.  I loved the contrast between the sweet crust and the savory filling, but I felt there was way too much mozzarella.  My family liked it, but I think in the future we'd rather have either a quiche or a pizza, not a hybrid.

I had a few problems with the crust.  One, I ate way too much while making it--so good!  Two, I didn't divide the two parts very well so I had too much on the bottom and not enough for the complete lattice on top.  It looked very homemade :-)

All in all, it was a nice addition to dinner and we'll enjoy the leftovers tonight.

Rugelach

Wow, when dough needs to be chilled, you really pay the price for not chilling it!  Because I hate waiting, I made the whole thing in 45 min. and the dough fell apart and spreeaaad in the pan.  But I just scraped it up and ate it--so delicious!!!

 The dough ready to be chilled.  Too bad I only chilled it 20 minutes.  I have to admit, I ate a lot of raw dough--it's so good


All spread and ready to roll.  I used only apricots and walnuts.


Rolled up--doesn't look tight enough and I don't think it should be open like that.


 It's already looking like a mess!

 Looks like a disaster, but it was so delicious!  I ate too many!  Next time I'm making chocolate.

I suppose I should be embarrassed by this amateur attempt, but it was a great learning experience and I love Tuesdays with Dorie!

Chocolate Truffle Tart

I've made truffle tarts in the past, but this was challenging because I tried to work too fast.  I didn't have time to find the biscotti so I skipped those.  I also substituted semi-sweet for milk chocolate b/c that's what I had.  And I used a large tart pan instead of the small ones.  The problem with that is I didn't know how long to bake the crust and I think I overbaked it, but haven't tasted it yet, so not sure.

Here are the pics.  The assistant is my daughter who I hope will be a great baker some day!





OK, we loved it, especially the chocolate chunks, but dare I say it?  It tasted like a brownie
